250g caster sugar
250ml water
100ml Verjuice
Heat water and sugar in a saucepan at medium heat. Once all the sugar is dissolved bring to the boil for around 3-4 minuets then leave to cool. Add 100ml of Verjuice to the dissolved sugar mixture.
Pour into empty ice-cream tub or freezer box and place in freezer for 1hr 30mins. Once mixture has started to solidify use whisk to break up, then place back into freezer. Continue this process every hour for around 4 hours until mixture is a solid but still able to scoop.
